Select a premium salmon filet, coloration will be more vibrant if choosing a farm raised species. Lay salmon filet on a broiling pan with minimal amount of water in the below basin. For this recipe, I used a casserole dish, however I prefer a broiling pan if you have one available.

  • Make slight vertical cuts in the salmon filet without searing through. Create slices along the entire filet, this will serve as little pockets for our ingredients.
  • Slice not dice (1) Medium size onion into long strands –
  • Cut a “Granny smith” apple into small wedges or preferably long thin slices
  • Mash garlic cloves – approximately 4-5 cloves
  • Insert the onion, apple and garlic into the sliced pockets created.

Another special burst of flavor  that makes this extra flavorful, I enjoy slicing ginger very thin in long strips and also inserting into pocketed sections. Sprinkle salmon filet with salt and pepper – do not be afraid to be generous with the pepper – mixes well with fruit of the apple and will not be overpowering.

Pour over the salmon filet “Makato’s Honey Ginger Dressing” – (Regular Ginger Dressing without the honey is also available) Cover the top of the filet with Makato’s dressing.  I typically use about an entire bottle, but will depend on the size of your salmon. Pour enough over the top but do not have it sitting / soaking if you are using a casserole dish. Then drizzle honey over the top  – you may also use pure Vermont maple syrup as a substitute.

Preheat Oven to 350 degrees and Cook for 30 minutes. If you desire you may cook a little longer so the ginger dressing gets a little crispy. *Simply serve with steamed spinach and a whole grain brown, red and black rice barley medley.
